Slice the Steak
Using a sharp knife, slice the ribeye steak against the grain into thin strips, about 1/4 inch thick.

Cook the Steak
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced steak, seasoning with salt and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the steak is browned and cooked to your desired doneness.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and mushrooms, sautéing for about 5 minutes until they are softened. Add the peppers and sauté for an additional 2-3 minutes.

Prepare the Sandwich
Divide the steak and vegetable mixture evenly among the hoagie rolls. Top each with 2 slices of white American cheese.

Place the assembled sandwiches under a broiler for 2-3 minutes, or until the cheese is melted and bubbly.
