Preheat the Oven
Preheat your oven to 225°F (107°C) for a slow roast.

Season the Beef
In a small bowl, mix salt, black pepper, garlic powder, and onion powder. Rub this mixture all over the American Wagyu roast beef evenly.
Roasting

Roast the Beef
Place the seasoned American Wagyu roast on a rack in a roasting pan. Roast in the preheated oven for about 3 to 4 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.

Rest the Beef
Remove the roast from the oven and tent it with aluminum foil. Allow it to rest for at least 20 minutes before slicing.

Prepare Vegetables
While the beef is resting, wash and prepare the lettuce by tearing it into bite-sized pieces. Slice the tomato and onion thinly.

Slice the Beef
Once the beef has rested, slice it thinly against the grain.

Assemble the Sandwich
On a serving platter, layer the sliced Wagyu beef, followed by provolone cheese, lettuce, tomato, and onion. Drizzle with mayonnaise as desired.
