Prepare the Trinity

In a large pot, melt the butter over medium heat. Add the onion, green bell pepper, celery, and garlic. Sauté until the vegetables are tender, about 5-7 minutes.

Add Seafood Stock

Stir in the seafood stock and diced tomatoes. Bring to a simmer.

Season the Mixture

Add the shrimp, crab meat, Creole seasoning, salt, and black pepper. Stir well and let it simmer for an additional 10-15 minutes, or until the shrimp are cooked through.

Serve

Remove from heat and stir in the parsley. Serve the etouffee over cooked rice.
