Combine ingredients
In a mixing glass or cocktail shaker filled partway with ice, pour 3 oz chilled sake, 1 oz gin, 0.5 oz yuzu juice, 0.25 oz simple syrup, 0.25 oz dry vermouth, and 2 dashes of orange bitters.
Stir or shake
If you prefer a silky, clear cocktail, stir the mixture gently for 20–30 seconds with a bar spoon until well chilled and slightly diluted. If you prefer a brighter, aerated texture, shake vigorously for 10–12 seconds and then double-strain.
Strain and serve
Strain the mixed cocktail into the chilled coupe or martini glass, using a fine strainer if you shook to remove any small ice chips.
Garnish & Finish
Express oils from the lemon or yuzu peel by holding the peel over the drink and giving it a quick twist so the oils spray over the surface. Rub the peel lightly around the rim, then drop it into the drink (or place on the rim). If using, float an edible flower or a small micro shiso leaf on top for aroma and visual appeal.
Serve immediately while cold. Recommend pairing with light sashimi or grilled fish.
