Prepare the Chicken
In a bowl, coat the chicken thighs with jerk seasoning, salt, and black pepper. Let marinate for at least 30 minutes.

Sauté Vegetables
In a large skillet, heat olive oil over medium heat. Add chopped onion, bell pepper, and minced garlic. Sauté until softened, about 5 minutes.

Slow Cook the Chicken
Transfer the marinated chicken thighs to a slow cooker. Add the sautéed vegetables and chicken broth. Cook on low for 6-8 hours or until the chicken is tender.

About 30 minutes before serving, prepare the yellow rice according to package instructions, using chicken broth for added flavor.
