Prepare the Catfish
Soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.

Prepare the Coating
In a large bowl, combine cornmeal, flour, cayenne pepper, paprika, salt, black pepper, garlic powder, and onion powder. Mix well.

Heat the Oil
In a deep skillet or frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat the Catfish
Remove catfish from the buttermilk and allow excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring an even coating.

Fry the Catfish
Carefully place the coated catfish fillets into the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through.

Drain and Serve
Remove the fried catfish from the oil and drain on paper towels. Serve hot with your choice of sides.
