    Prepare the Fish

    In a bowl, whisk together the eggs and milk. In another bowl, mix the flour, cornmeal, salt, and black pepper. Dip each whiting fillet into the egg mixture, then coat with the flour mixture.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until hot but not smoking.

    Fry the Fish

    Carefully add the coated fish fillets to the hot oil, cooking for about 4-5 minutes on each side or until golden brown and crispy. Remove from oil and drain on paper towels.

    Assemble the Sandwich

    Toast the potato bread slices lightly. On one slice, place a lettuce leaf, a fried fish fillet, a slice of tomato, and a generous dollop of tartar sauce. Top with another slice of bread.

    Serve

    Cut the sandwich in half if desired and serve immediately with additional tartar sauce on the side.
