Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and butter. Melt them together over a pot of simmering water (double boiler method) or in the microwave in 20-second intervals, stirring until smooth. Set aside to cool slightly.

Whisk Eggs and Sugar
In a separate bowl, whisk the eggs and granulated sugar together until pale and frothy, about 5 minutes.

Combine Mixtures
Once the chocolate mixture has cooled slightly, stir it into the egg mixture until fully combined.

Whip the Cream
In a clean bowl, whip the heavy cream and vanilla extract until soft peaks form.

Fold in Cream
Gently fold the whipped cream into the chocolate mixture in three additions, being careful not to deflate the air from the cream.

Chill
Divide the mousse into serving cups or bowls and refrigerate for at least 2 hours, or until set.
