    Marinate the Chicken

    In a bowl, combine chicken thighs with jerk seasoning and olive oil. Mix well to coat the chicken evenly. Cover and marinate in the refrigerator for at least 1 hour or overnight for best flavor.

    Cook the Chicken

    Preheat the grill or a skillet over medium-high heat. Grill or sear the marinated chicken thighs for 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let it rest.

    Prepare the Rice

    In a pot, heat a little olive oil over medium heat. Add chopped onion, bell pepper, and garlic. Sauté until the onion is translucent. Add the rice and stir for a minute.

    Cook the Rice

    Pour in the chicken broth, add salt and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and liquid is absorbed. Fluff with a fork.

    Serve

    Slice the grilled jerk chicken and serve over the seasoned rice. Garnish with sliced green onions.
