Prep the chicken
Pat chicken dry with paper towels. In a small bowl combine olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub the mixture evenly over the chicken.

Cook the chicken
Heat a skillet over medium-high heat. When hot, add the chicken and sear 3-4 minutes per side until well browned. Reduce heat to medium-low, cover, and cook another 5-8 minutes until internal temperature reaches 165°F (74°C). Alternatively, grill over medium heat 6-8 minutes per side until cooked through.

Shred and saucé
Transfer cooked chicken to a cutting board, let rest 3 minutes, then shred with two forks. Return shredded chicken to the warm skillet or a bowl and stir in 1/2 cup BBQ sauce until evenly coated. Keep warm while assembling nachos.

In a small saucepan or skillet over medium heat combine rinsed black beans, corn, ground cumin, and 1/2 tablespoon lime juice. Cook just until warmed through, about 3-4 minutes, stirring occasionally. Remove from heat and set aside.

Preheat and prepare
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment or use an oven-safe platter. Spread half of the tortilla chips in an even layer on the baking sheet, leaving a little space between chips for layering.

Top and bake
Add the remaining tortilla chips on top in a second layer, then repeat with the remaining cheeses, chicken, beans/corn, red onion, and jalapeños. Place the assembled nachos in the preheated oven and bake 6-8 minutes or until cheese is fully melted and bubbling.

Finish & garnish
Remove nachos from oven. Spoon dollops of sour cream or crema, pico de gallo, and guacamole over the top (or serve those on the side). Sprinkle chopped cilantro and a few extra jalapeño slices if desired. Serve immediately with lime wedges.
