Method
Pork Belly

Prepare the Pork Belly
Season the pork belly with salt and black pepper on all sides. Let it sit at room temperature for about 30 minutes.

Cool and Slice
Once cooked, remove the pork belly and let it cool. Slice into 1-inch thick pieces.
Amberjack Sashimi

Prepare the Amberjack
Slice the amberjack fillet into thin pieces. Arrange on a plate and garnish with lemon slices and a sprinkle of salt. Serve with wasabi on the side.
House-Made XO Sauce

Soak the Dried Seafood
Soak dried scallops and dried shrimp in warm water for 30 minutes until softened. Drain and chop.

Add Chili Flakes
Stir in chili flakes and cook for an additional 2 minutes. Remove from heat and let cool.
