    Prepare protein

    Choose one protein: bacon, ham, or sausage. For bacon: place 3 strips on a cold skillet, turn heat to medium, cook 6–10 minutes turning occasionally until crisp, then drain on paper towels. For ham: heat a nonstick skillet over medium, add 2 slices and heat 1–2 minutes per side until warmed and slightly browned. For sausage links: add 2 links to a skillet with 1 tsp oil, cook over medium for 8–10 minutes, turning occasionally, until browned and cooked through (internal temp 160°F/71°C). Keep warm on a low oven (200°F/95°C) or covered with foil.

    Cook eggs to order

    While protein is finishing, heat a 10–12 inch nonstick skillet over medium-low and add 1 tbs butter and 1 tsp vegetable oil (prevents burning). Crack 2 large eggs into a small bowl (or directly into skillet). For sunny-side-up: cook gently 2–3 minutes until whites set, cover for the last 30 seconds if needed; do not flip. For over-easy/medium: cook 1–2 minutes until whites mostly set, flip gently and cook 15–30 seconds (over-easy) or 45–60 seconds (over-medium). For over-hard or hard-cooked scrambled: scramble eggs with 0.25 tsp salt and 0.125 tsp pepper before pouring into skillet and cook, stirring, 2–3 minutes until set. Season eggs with remaining salt and pepper. Transfer eggs to plate and keep warm.

    Make waffle batter

    Preheat waffle iron according to manufacturer. In a medium bowl whisk together 1 cup flour, 1 tbs sugar, 1 tsp baking powder, and 0.25 tsp salt. In a separate bowl whisk 0.75 cups milk, 1 egg, 2 tbs oil (or melted butter), and 0.5 tsp vanilla. Pour wet into dry and whisk just until combined; small lumps are fine. Do not overmix.

    Cook waffle

    Lightly spray waffle iron with nonstick cooking spray. Pour batter amount recommended by your iron (about 2/3 to 1 cup) onto center, close lid and cook 3–5 minutes until golden brown and crisp. Remove waffle and keep warm on a wire rack in a low oven (200°F/95°C) while finishing eggs/protein if needed. If making ahead, reheat in a 375°F (190°C) oven for 5 minutes to crisp.

To Finish

    Assemble the plate: place the warm waffle on the plate, add the two eggs prepared to order beside it, and arrange your chosen protein (bacon, ham, or sausage) alongside. Drizzle 2–3 tbs of maple syrup over the waffle or serve syrup on the side. Dust waffle lightly with powdered sugar and garnish eggs or plate with chopped parsley if desired.
