Pancake batter

    Mix dry ingredients

    Whisk together the all-purpose flour, granulated sugar, baking powder, and salt in a large mixing bowl until evenly combined.

    Combine wet ingredients

    In a separate bowl or large measuring cup, whisk the milk, 1 large egg, melted butter, and vanilla extract until smooth.

    Make the batter

    Pour the wet ingredients into the dry ingredients. Gently stir with a spatula or whisk just until combined — small lumps are fine. Do not overmix. Let the batter rest for 5 minutes while you preheat the pan; this helps make the pancakes fluffy.

    Cook bacon

    To cook bacon: heat a large skillet over medium heat. Lay 3 bacon strips in a single layer and cook 3–5 minutes per side, turning occasionally, until crisp-tender to your liking. Transfer to a paper towel–lined plate to drain. Keep warm in a low oven (about 200°F / 95°C) if desired while you cook pancakes and egg.

    Cook sausage

    To cook sausage links: if using links, brown them in a skillet over medium heat, turning frequently, about 10–12 minutes, until cooked through (internal temperature 160°F / 71°C) and evenly browned. Alternatively, bake on a sheet pan at 400°F (200°C) for 15–18 minutes, turning once. Keep warm while you finish the meal.

    Preheat pan

    Place a nonstick skillet or griddle over medium heat. Lightly grease with a little butter or neutral oil and wipe off excess with a paper towel so you have a thin film. Test heat by sprinkling a few drops of water — they should dance and sizzle.

    Cook pancakes

    For each pancake, ladle about 1/3 cup of batter onto the hot surface, leaving space between them. Cook until bubbles form on the surface and edges look set, 2–3 minutes. Flip and cook the second side for 1–2 minutes, until golden-brown and cooked through. Repeat with remaining batter, adjusting heat as needed to prevent burning. This recipe yields 8–10-inch pancakes — expect about 3 pancakes (depending on portion) for one serving.

    Keep warm

    Transfer cooked pancakes to a plate and keep warm in a low oven (200°F / 95°C) while you finish the egg and proteins, stacking with a sheet of parchment between if desired.

    Preferred doneness

    Decide how the guest wants the egg cooked: fried (sunny-side up or over-easy), scrambled, or over-medium/over-hard. The instructions below cover common options. Use the same skillet used for proteins or pancakes, wiped clean if needed, and heat over medium-low.

    Fried (sunny-side up)

    Add 1 tsp butter or oil to the skillet and let it melt and foam. Crack 1 large egg into a small bowl, then gently slide it into the skillet. Season with a pinch of salt and a grind of pepper. Cook on medium-low until the whites are set but yolk remains runny, about 2–3 minutes. For slightly set yolk (over-easy), carefully flip and cook 10–20 seconds more. For over-medium or over-hard, cook longer until yolk reaches desired firmness.

    Scrambled

    Crack the egg into a bowl, whisk with a pinch of salt and pepper until uniform. Add 1 tsp butter to the skillet and melt over medium-low. Pour in the egg and let sit briefly until edges begin to set. Gently push curds from the edges to the center with a spatula until softly set but still moist, 1–2 minutes. Remove from heat — residual heat will finish them.

To finish / serve

    Plate one stack of pancakes (typically 2–3 pancakes per serving). Top with a pat of butter if desired and serve maple syrup on the side or lightly drizzled. Arrange the cooked bacon strips or sausage links alongside the pancake stack. Place the cooked egg on the plate (or on top of the pancakes if requested).
