Cook aromatics and meat
Heat a large skillet over medium-high heat and add 1 tablespoon vegetable oil. When hot, add the diced onion and sauté 3–4 minutes until translucent. Add the minced garlic and cook 30 seconds until fragrant. Push the aromatics to the side, add the ground beef (or turkey) to the pan, break up with a spatula and cook 6–8 minutes until browned and no longer pink.

Season and simmer
Stir in the ground cumin, chili powder, smoked paprika, salt, and black pepper. Add the tomato paste and cook 1 minute, stirring to coat the meat. Pour in 1/2 cup broth and bring to a simmer, scraping up any browned bits. Reduce heat to medium-low and cook 4–6 minutes until the mixture thickens. Finish with 1 tablespoon lime juice, taste and adjust seasoning.

Assemble burritos
Lay a warmed tortilla on a clean surface. Spoon about 1/4 of the cooked meat filling down the center of each tortilla (roughly 1/2 cup). Top with 1/4 cup shredded cheese, a handful (~1/4 cup) shredded lettuce, ~2 tablespoons diced tomato, 1–2 tablespoons sour cream and 2 tablespoons salsa. Fold the sides in, then roll tightly to enclose the filling. Repeat for all tortillas.

Optional crisping
If you prefer a crisp exterior, heat a nonstick skillet over medium, add a light brushing of oil, place each burrito seam-side down and cook 1–2 minutes per side until golden and sealed.

Prep potatoes
Cut the scrubbed russet potatoes into 1/4–1/3-inch thick fries. Place cut potatoes in a large bowl of cold water and soak 20–30 minutes to remove excess starch; this helps crisping. Drain and pat very dry with clean kitchen towels or paper towels.

Coat and season
Toss the dried potato sticks with 1 tablespoon cornstarch until evenly dusted. In a small bowl mix garlic powder, paprika, 1 teaspoon salt, and 1/2 teaspoon black pepper; set aside.

Fry (shallow fry method)
Heat 2 cups vegetable oil in a heavy skillet or saucepan to 350°F (175°C). Carefully add fries in a single layer (work in batches to avoid overcrowding) and fry 4–6 minutes until golden and crisp. Use a slotted spoon to transfer fries to a paper-towel lined tray and immediately season with the prepared spice mix. Repeat with remaining fries.

Alternative oven-baked method
If you prefer baked fries: preheat oven to 425°F (220°C). Toss the cornstarch-coated fries with 1–2 tablespoons oil, spread in a single layer on a parchment-lined sheet pan, and bake 25–30 minutes, flipping halfway, until golden and crisp. Season with the spice mix as soon as they come out of the oven.
