    Prepare meats

    In a large mixing bowl, combine ground beef and raw pork chorizo. Use your hands or a sturdy spoon to break up the chorizo and evenly distribute it through the beef until mixture is uniform in color and texture.

    Add eggs and seasonings

    Crack the 4 large eggs into the bowl with the meat. Add the grated Parmesan, chopped parsley, sea salt, and black pepper. Mix thoroughly until the eggs are fully incorporated and the mixture holds together when pressed (about 1–2 minutes of mixing).

    Form patties

    Divide the mixture into 6 equal portions (for hearty servings) or 8 for smaller portions. Gently shape each portion into a compact patty about 3/4-inch thick, pressing the edges so they do not crack while cooking.

For browning & finishing

    Preheat pan

    Place a large heavy skillet (cast iron preferred) over medium-high heat. Add 1 tablespoon neutral oil and allow it to shimmer but not smoke, about 1–2 minutes.

    Sear patties

    Set the patties in the hot skillet without crowding. Cook undisturbed for 3–4 minutes until a deep brown crust forms on the bottom. Flip and add 1 tablespoon unsalted butter to the pan; tilt the pan and spoon melted butter over the patties for 1–2 minutes to baste.

    Finish cooking

    Reduce heat to medium and continue cooking for another 3–4 minutes, flipping once, until internal temperature reaches 160°F (71°C) for ground beef with chorizo. If patties are thick, cover the pan and cook an additional 2–3 minutes, checking temperature to avoid overcooking.

    Optional cheese melt

    If using shredded cheddar, sprinkle about 1–2 tablespoons on each patty in the last minute of cooking. Cover the pan briefly (30–60 seconds) to melt cheese.

    Rest and garnish

    Transfer patties to a plate and let rest for 3 minutes to allow juices to redistribute. Garnish with chopped chives and a few drops of hot sauce if desired. Serve immediately.
