Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, mix together the chocolate graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture evenly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then remove from the oven and let cool.

Make the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add sugar, sour cream, vanilla extract, cocoa powder, and malted milk powder, mixing until well combined. Add the eggs one at a time, mixing on low speed until just incorporated.

Combine and Bake
Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center slightly jiggles. Turn off the oven and crack open the door, letting the cheesecake cool in the oven for 1 hour.

Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight. Before serving, you can top with whipped cream or chocolate shavings if desired.
