Tart Crust
Method
Directions
- 1
Prepare the Tart Crust
In a mixing bowl, combine the flour, cocoa powder, butter, and sugar. Mix until crumbly. Add the egg yolk and vanilla extract, mixing until a dough forms. Press into a tart pan and chill for 30 minutes.
- 2
Pre-bake the Crust
Preheat the oven to 350°F (175°C). Bake the tart crust for 15 minutes. Remove from the oven and let it cool.
- 3
Make the Filling
In a saucepan, heat the heavy cream over medium heat until simmering. Remove from heat and add chopped bittersweet chocolate, stirring until melted. Add brewed espresso, sugar, eggs, and vanilla. Mix until smooth.
- 4
Bake the Filling
Pour the filling into the cooled tart crust. Bake for 20-25 minutes until set but slightly wobbly in the center. Allow to cool completely.
- 5
Prepare the Chocolate Glaze
In a small saucepan, heat the heavy cream until simmering. Remove from heat and add the chopped bittersweet chocolate, stirring until smooth.
- 6
Glaze the Tart
Once the tart is completely cooled, pour the chocolate glaze over the tart, spreading evenly. Chill in the refrigerator for at least 1 hour before serving.
