    Make the Dough

    In a large bowl, mix together the flour and salt. Make a well in the center and add the egg, sour cream, and water. Mix until a dough forms. Knead on a floured surface for about 5 minutes until smooth. Cover and let rest for 30 minutes.

    Prepare the Filling

    Peel and boil the potatoes until tender, about 15 minutes. Drain and mash. In a skillet, melt the butter over medium heat, add diced onion and sauté until translucent. Flake the cooked walleye and mix it with the mashed potatoes, sautéed onions, salt, black pepper, and chives.

    Assemble the Pierogies

    Roll out the dough on a floured surface to about 1/8 inch thick. Cut out circles using a round cutter. Place a spoonful of filling in the center of each circle, fold over and pinch the edges to seal.

    Cook the Pierogies

    Bring a large pot of salted water to a boil. Drop the pierogies in batches and cook for about 3-4 minutes or until they float to the top. Remove with a slotted spoon and serve with melted butter or sour cream.
