Prepare the Chicken
Preheat your oven to 375°F (190°C). Use a sharp knife to create a pocket in each chicken breast by slicing it horizontally, being careful not to cut all the way through.

Stuff the Chicken
Fill each chicken breast pocket with smoked gouda cheese, using about 1/4 cup of cheese per breast. Close the pocket and secure with toothpicks if necessary.

Season the Chicken
Rub the outside of each stuffed chicken breast with olive oil, then season with salt and black pepper.

Cook the Chicken
Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Remove the chicken from the oven and let it rest for a few minutes before slicing. Serve with a generous spoonful of apple chutney on top and garnish with fresh parsley.
