Caramel Preparation

Make the Caramel
In a small saucepan, combine the granulated sugar and water. Cook over medium heat while stirring until the sugar dissolves completely.

Caramelize the Sugar
Once the sugar is dissolved, stop stirring and let it cook until it turns a deep amber color. This should take about 5-7 minutes. Be careful not to burn it.

Coat the Flan Mold
Quickly pour the caramel into a flan mold or individual ramekins, tilting to coat the bottom evenly. Set aside to allow the caramel to harden.

Preheat the Oven
Preheat your oven to 350°F (175°C).

Pour Custard into Mold
Carefully pour the custard mixture over the hardened caramel in the flan mold or ramekins.

Prepare for Baking
Place the flan mold in a larger baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the flan mold to create a water bath.

Bake the Flan
Bake in the preheated oven for 50-60 minutes, or until the custard is set and a toothpick inserted in the center comes out clean.

Cool and Refrigerate
Remove the flan from the oven and let it cool in the water bath for about 30 minutes. Then refrigerate for at least 4 hours, or overnight for best results.
Serving

Unmold the Flan
To serve, run a knife around the edges of the flan. Invert onto a serving plate and gently lift the mold to release the flan. The caramel sauce will flow over the flan.
