Making the Churro Dough

    Boil the Liquid

    In a medium saucepan, combine 1 cup of water, 2 tablespoons of unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Bring the mixture to a boil over medium heat, stirring occasionally.

    Add the Flour

    Once boiling, remove the saucepan from the heat and quickly stir in 1 cup of all-purpose flour until the mixture forms a ball.

    Incorporate the Eggs

    Allow the dough to cool for a few minutes. Then, add 2 large eggs one at a time, mixing well after each addition. Finally, stir in 1 teaspoon of vanilla extract until the dough is smooth and well combined.

Preparing the Cinnamon Sugar Coating

    Mix the Cinnamon Sugar

    In a small bowl, mix together 1 cup of granulated sugar and 2 tablespoons of ground cinnamon until thoroughly combined. Set aside.

Frying the Churros

    Heat the Oil

    In a deep frying pan or pot, heat 2 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Pipe the Dough

    Transfer the churro dough into a piping bag fitted with a large star tip. Pipe 4 to 6-inch long strips of dough into the hot oil, cutting them with scissors as you go.

    Fry the Churros

    Fry the churros in batches for about 2-3 minutes on each side, or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil.

    Coat with Cinnamon Sugar

    Immediately roll the fried churros in the cinnamon sugar mixture until they are fully coated. Place on a paper towel-lined plate to drain any excess oil.
