Prepare the Filling
In a mixing bowl, combine the shredded cooked chicken, cream cheese, shredded cheese, chopped green onions, salt, and black pepper. Mix until well combined.

Prepare the Tortillas
If the corn tortillas are stiff, warm them in a microwave or on a skillet for a few seconds until pliable.
Assembly

Fill the Tortillas
Take one tortilla and place a generous amount of the chicken filling in the center. Roll the tortilla tightly and place it seam-side down in a greased baking dish. Repeat with all tortillas.

Add Sauce
Pour the green enchilada sauce evenly over the filled tortillas in the baking dish.

Add Toppings
Sprinkle the additional shredded cheese over the top of the enchiladas.
Baking

Bake the Enchiladas
Preheat your oven to 375°F (190°C). Bake the enchiladas uncovered for 20-25 minutes or until the cheese is melted and bubbly.

Garnish and Serve
Remove from the oven and let cool for a few minutes. Garnish with sour cream and fresh cilantro before serving.
