Prep the chicken
Trim excess fat from the chicken and cut into 1- to 1.5-inch bite-sized pieces. Pat pieces dry with paper towels.
In a bowl, combine salt, black pepper, garlic powder, and onion powder. Season the chicken pieces evenly with the spice mix.
Set up a dredging station: whisk eggs in one shallow bowl. In another bowl mix flour and cornstarch thoroughly.
Working in batches, dip seasoned chicken into the eggs, shaking off excess, then coat well in the flour-cornstarch mixture. Press the coating to adhere.
Heat about 1 cup vegetable oil in a large skillet over medium-high heat until shimmering and 350°F if using a thermometer. Add coated chicken in a single layer (do not crowd) and fry 3–4 minutes per side until golden brown and cooked through (internal temp 165°F). Transfer to a wire rack set over a baking sheet to drain. Repeat with remaining chicken.
Sweet Chili Sauté
If using frozen or store-bought lattice fries, bake or fry according to package directions and keep hot. For homemade, bake or fry until crisp and golden and set aside on a warm tray.
Slice the onion and bell peppers into 1/2-inch strips. If pineapple chunks are large, halve them.
In a large skillet or wok, heat 1 tablespoon vegetable oil over medium-high heat until hot. Add sliced onion and bell peppers and sauté 3–4 minutes until they begin to soften but still have some crunch.
Add pineapple chunks and continue to cook 1–2 minutes to warm and release some juices.
Stir in 1/2 cup sweet chili sauce, 1 tablespoon soy sauce, 1 teaspoon rice vinegar and optional sriracha. Bring sauce to a gentle simmer.
If the sauce needs slight thickening, stir the cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon cold water) then add to the skillet and cook 30–60 seconds until glossy and slightly thickened.
Add the fried crispy chicken pieces to the skillet and toss gently to coat evenly in the sweet chili sauce and to reheat the chicken, about 1–2 minutes. Ensure each piece is well glazed.
Assembly & Garnish
Divide the warm lattice fries onto 4 appetizer plates (approximately 3/4 cup fries per plate if making 4 servings).
Spoon the sauced sweet chili chicken, peppers, onion and pineapple over the bed of fries, distributing evenly.
Garnish with sliced green onions and a sprinkle of sesame seeds if using. Serve immediately with lime wedges on the side for squeezing.
