Prepare
Preheat the oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper; grease the parchment too.
In a medium bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and fine salt until evenly combined.
In a separate bowl or large measuring cup, whisk the eggs, whole milk, oil, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients. Stir with a spatula or whisk just until combined and there are no large streaks of flour (do not overmix). Batter will be slightly pourable.
Pour batter into the prepared 8-inch pan, smoothing the top. Bake in the center of the oven for 22–28 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs but not wet batter.
Chocolate Ganache & Sauce
Place the chopped bittersweet chocolate in a heatproof bowl.
In a small saucepan, bring the heavy cream just to a simmer over medium heat (do not boil). Pour the hot cream over the chocolate and let sit undisturbed for 1 minute to soften.
Stir the cream and chocolate gently with a whisk or spatula until smooth and glossy. If using, stir in the butter and light corn syrup until incorporated. Let ganache cool 10–15 minutes until slightly thickened but still pourable for glazing.
Reserve about 1/3 cup of the ganache warm for drizzling over individual plates. Use the remaining ganache to pour over the cooled cake, allowing it to spread and drip down the sides. Use an offset spatula to smooth the top if desired. Chill the glazed cake 15 minutes to set the ganache.
Fruit Compote
In a small saucepan combine the mixed berries, granulated sugar, and lemon juice. Stir to combine and bring to a gentle simmer over medium-low heat.
Meanwhile, mix the cornstarch with the cold water to make a slurry. When the berries begin to break down and release juice (about 5 minutes), stir the slurry and add it to the pan.
Continue to simmer for 1–2 minutes until the mixture thickens slightly. Taste and adjust sweetness or lemon if needed. Remove from heat and let cool to warm or room temperature; compote will thicken further as it cools.
Whipped Cream & Garnish
Chill a medium bowl and beaters (or a stand mixer bowl) for 5–10 minutes in the freezer for best whipping results.
Place the cooled, ganache-glazed cake on a serving plate. Spoon or spread the fruit compote over the top of the cake in a ring or center, leaving some ganache visible, or serve compote on the side.
Pipe or spoon dollops of whipped cream around the cake or on individual slices. Sprinkle flaky sea salt lightly across the top of the ganache and whipped cream for contrast.
Finish with the toasted chopped nuts and fresh mint leaves as garnish. For service, warm the reserved ganache slightly and drizzle over plated slices and add extra compote if desired.
