Prepare spreads

Mix the Dijon mustard and mayonnaise in a small bowl until smooth. Spread butter evenly on one side of each bread slice (these sides will face the griddle if grilling). On the opposite (unbuttered) side of one slice, spread the mustard-mayo mixture evenly.

Assemble sandwich

Place the slice of bread with the mustard-mayo on a clean work surface, spread side up. Layer the sliced cheddar evenly over the spread. Fold or arrange the ham slices over the cheese so they cover the surface. If using pickles, place them on top of the ham. Finish by placing the second slice of bread on top, buttered side out.

Season

Lightly sprinkle the exposed interior edge of the sandwich with freshly ground black pepper for a hint of spice.

Cold Sandwich Option

If you prefer a cold sandwich, cut the assembled sandwich in half diagonally (or down the middle) and serve immediately.

Hot / Grilled Option

Heat a nonstick skillet or griddle over medium heat. Place the assembled sandwich in the pan, buttered side down. Add the remaining 1 tbs butter to the pan and use a spatula to press gently on the sandwich. Cook for 2–3 minutes until the bottom is golden brown and the cheese begins to melt. Flip the sandwich carefully and cook the second side another 2–3 minutes until golden and the cheese is fully melted. Reduce heat slightly if bread browns too quickly.

Remove sandwich from the pan and let rest 1 minute before cutting. This prevents hot cheese from oozing out immediately and helps slices hold together.
