Prep Shrimp & Coating
Trim & Dry
Pat shrimp thoroughly dry with paper towels. Leave tails on for presentation. If shrimp are large, make a shallow cut along the belly to remove any remaining vein. Lightly score the underside (opposite the tail) to help shrimp stay straight while frying.
Set up dredging stations
Arrange three shallow bowls or rimmed plates: (1) dry mix — combine 1 cup all-purpose flour, 1/4 cup cornstarch, and 1/2 tsp baking powder; (2) egg wash — whisk 2 large eggs with 1/2 cup cold water until smooth; (3) coating — combine 2 cups unsweetened shredded coconut, 1/2 cup sweetened shredded coconut (if using), and 1/2 cup panko breadcrumbs (if using) and gently mix to distribute evenly.
Frying
Heat oil
Pour 3 to 4 cups of neutral oil into a deep, heavy-bottomed skillet or a medium Dutch oven to a depth of about 2 inches. Heat over medium-high until oil reaches 350°F (175°C). If you don't have a thermometer, test with a small pinch of flour — it should sizzle and brown slowly.
Dredge shrimp
Working in small batches (4–6 shrimp to avoid overcrowding), dredge each shrimp first in the dry flour mixture, shaking off excess; then dip into the egg wash, letting excess drip off; finally press into the coconut mixture, coating all sides and pressing the coconut onto the shrimp so it adheres. Place coated shrimp on a wire rack while heating oil and between batches (do not stack).
Fry until golden
Carefully lower 4–6 coated shrimp into the hot oil. Fry until golden brown and opaque throughout, about 2 to 3 minutes depending on shrimp size. Turn once if needed for even browning. Use a slotted spoon or spider to remove shrimp and transfer to a paper towel–lined tray or wire rack. Sprinkle lightly with a pinch of salt immediately. Repeat with remaining shrimp, keeping cooked shrimp warm in a low oven (200°F / 95°C) if desired.
Drain & rest
Let the fried shrimp drain for a minute on paper towels or a wire rack. Resting 2–3 minutes ensures juices settle and coating stays crisp.
Sweet Chili Sauce (if making quick homemade)
If using store-bought sweet chili sauce, pour into a small bowl and set aside. To make a quick homemade version: In a small saucepan combine 1/2 cup water, 1/2 cup sugar, 2 tbsp rice vinegar, 1 tbsp fish sauce (optional), 1 tbsp sambal oelek or finely chopped red chilies, and 1 tsp cornstarch dissolved in 1 tbsp water. Bring to a simmer, stirring until sugar dissolves, then simmer 1–2 minutes until slightly thickened. Remove from heat and cool. Taste and adjust for sweetness, heat, or acidity. Transfer to a serving bowl.
Finish & Serve
Arrange the coconut shrimp on a warmed platter. Garnish with cilantro leaves and lime wedges. Serve immediately with the sweet chili sauce in small dipping bowls and optional sliced fresh red chili or scallion on the sauce for color and extra heat. Recommend serving 4–6 pieces per person as an appetizer.
