Peameal Bacon
Bring pan to temperature
Place a large nonstick or stainless steel skillet over medium heat and add 1 tablespoon butter or neutral oil. Allow butter to melt and foam but not brown, about 1 minute.
Cook peameal bacon
Add the 3 peameal bacon slices in a single layer. Cook over medium heat 3–4 minutes per side (6–8 minutes total) until the exterior is golden and slightly caramelized and the center is heated through. Turn once with tongs or a spatula to get even color. If slices are thick, reduce heat to medium-low and cook a few extra minutes to heat through without over-browning.

Choose egg style
Decide how you want the eggs (any style): fried (sunny-side or over-easy), scrambled, or poached. The following instructions cover fried (sunny-side/over) and scrambled. If poaching, bring a saucepan of water to a gentle simmer with a splash of vinegar and poach 3 eggs for 3–4 minutes for soft yolks.
Fried eggs (sunny-side or over-easy/medium)
For fried eggs: keep skillet over medium heat. Add 1 tablespoon butter and let it melt and foam. Crack eggs into a small bowl one at a time and gently slide into the pan so they remain separate. Season lightly with 1/4 tsp salt and 1/8 tsp black pepper. For sunny-side, cook undisturbed until whites are set and edges lightly crisp, 2–3 minutes. For over-easy, once whites are mostly set, gently flip each egg with a spatula and cook 15–30 seconds for runny yolk (over-easy) or 45–60 seconds for slightly firmer yolk (over-medium).
Scrambled eggs
For scrambled: crack the 3 eggs into a bowl, add 1/8 tsp salt and a pinch of pepper, and whisk until uniformly blended and slightly frothy. Heat 1 tablespoon butter in the skillet over medium-low. Pour in eggs and let them sit undisturbed for 10–15 seconds, then gently push from the edges to the center with a silicone spatula, folding the curds until mostly set but still soft and slightly glossy, about 1.5–2 minutes. Remove from heat just before fully set; carryover heat will finish them.
