Prepare

Chill a coupe or martini glass in the freezer or fill with ice water to chill while you mix the cocktail. If using an egg white, separate the egg and reserve the white.

Dry shake (if using egg white)

Combine gin, crème de violette, fresh lemon juice, simple syrup, and the egg white in a cocktail shaker. Seal and shake vigorously for 15–20 seconds without ice to emulsify and build a silky foam.

Wet shake

Open the shaker, add a large handful of ice, reseal and shake vigorously for another 10–15 seconds until well chilled (the shaker should become very cold to the touch).

Strain and serve

Discard ice or water from the chilled glass. Double-strain the cocktail into the chilled coupe using a Hawthorne strainer and a fine mesh strainer to catch any small ice chips and egg white solids. This produces a smooth, frothy top.

Garnish

Express a lemon twist over the drink to release oils, then run it around the rim and drop it into the cocktail. Optionally add a single dash of Angostura bitters on the foam for subtle aromatic contrast (drop the dash on the foam and use a toothpick to create a small decorative pattern if desired).

Serve

Serve immediately while the foam is fresh. The expected color is pale violet/blue and the texture should be silky if egg white was used.
