Choose spirit
Select your base spirit: vodka is traditional and recommended. If you prefer gin or tequila, replace the vodka quantity with the same measure (1.5 oz).
Prepare glass
Take a highball or pint glass and run a lime wedge around the rim. On a small plate combine the celery salt and ground black pepper; dip the rim of the glass into the mixture to coat evenly. Fill the glass with ice cubes.
Mix
In the glass (or in a mixing glass and then pour), add 1.5 oz of your chosen spirit, 4 oz Clamato juice, 0.5 oz fresh lime juice, 3 dashes Worcestershire sauce and 2 dashes Tabasco sauce. Stir gently for about 10–15 seconds to combine and chill.
Taste and adjust
Taste the cocktail. If you like it spicier, add another dash of Tabasco. For more umami, add an additional dash of Worcestershire. If too tart, add a splash more Clamato (½ oz).
Garnish and serve
Place a lime wedge on the rim and a celery stalk in the drink if using. Serve immediately with a stirrer. Provide a straw if desired.
