Preheat and prepare

Preheat your Belgian waffle iron according to the manufacturer's instructions. If it has temperature settings, set it to medium-high (typically 375–400°F / 190–205°C). Lightly brush or spray the waffle iron plates with a little melted butter or neutral oil if your waffle iron recommends it.

Whisk dry ingredients

In a large mixing bowl, whisk together the all-purpose flour (2 cups), granulated sugar (2 tbsp), baking powder (2 tsp), and fine salt (1 tsp) until evenly combined.

Mix wet ingredients

In a separate bowl or large measuring cup, beat the 2 large eggs lightly. Add the whole milk (1.5 cups), melted unsalted butter (6 tbsp), and vanilla extract (1 tsp). Whisk until homogeneous.

Combine wet and dry

Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold with a spatula or whisk until mostly smooth — a few small lumps are fine. Do not overmix; overworking the batter can make waffles tough. Let the batter rest 5–10 minutes while the waffle iron finishes heating; this helps the baking powder activate and yields lighter waffles.

When the waffle iron is hot, open it and lightly grease if needed. Pour or ladle batter onto the center of the bottom plate — amount depends on your waffle iron size (approximately 1/2 to 3/4 cup for standard Belgian waffle irons). Spread slightly if necessary but avoid overflowing.

Cook waffles

Close the lid and cook until the waffle is deep golden brown and crisp, typically 3–5 minutes per waffle depending on your iron and setting. Most irons have an indicator light or beep; otherwise check visually. For extra crispness, allow an extra 30–60 seconds but watch for burning.

Keep warm

Transfer finished waffles to a wire rack set over a baking sheet in a 200°F (95°C) oven to keep them crisp while you cook the remaining batter. Stacking directly on a plate will trap steam and soften the exterior.

Dust waffles with powdered sugar (2 tbsp) if desired, top with fresh berries (1 cup), a dollop of whipped cream (1/2 cup) and serve with maple syrup (1/2 cup) on the side. Adjust toppings to taste.
