Melt the Chocolates
In a heatproof bowl, combine dark chocolate and milk chocolate. Set over a pan of simmering water (double boiler) and stir until melted and smooth.

Make the Ganache
Remove from heat and stir in the heavy cream, butter, vanilla extract, and sea salt until fully combined.

Chill the Mixture
Pour the ganache into a shallow dish and refrigerate for about 1 hour, or until firm.

Shape the Chocolates
Once chilled, scoop out small portions of the ganache and roll them into balls. Roll each ball in cocoa powder to coat evenly.

Add Nuts
Optionally, before rolling in cocoa powder, you can roll the balls in chopped nuts for added texture.

Store and Serve
Place the finished chocolates in an airtight container and store in the refrigerator until ready to serve. Enjoy after dinner with coffee or tea.
