Prepare binding mixture
In a small bowl, combine the panko breadcrumbs and whole milk; let sit 5 minutes until panko is softened.

Combine ingredients
In a large mixing bowl, add the ground beef, soaked panko, eggs, grated onion, minced garlic, Worcestershire sauce, hot sauce, smoked paprika, ground cumin, kosher salt, and black pepper. Use your hands or a sturdy spoon to gently but thoroughly mix until just combined. Do not overwork the meat to keep patties tender.

Portion patties
Portion the mixture into 36 equal portions (roughly 1.75 to 2 ounces / 50–57 g each) using a scoop or kitchen scale. Lightly shape each portion into a compact round patty about 2 1/2 inches / 6 cm diameter and roughly 1/4–3/8 inch thick, pressing a slight indentation in the center to prevent doming while cooking.

Cook patties
Preheat a large skillet or griddle over medium-high heat and add neutral oil or lightly spray the pan. Working in batches if necessary, cook patties 2–3 minutes per side until a deep brown crust forms and internal temperature reaches 160°F (71°C). Avoid crowding the pan. If using oven-baked method, preheat oven to 400°F (200°C), place patties on a lightly oiled sheet pan and bake 10–12 minutes, flipping halfway, until 160°F (71°C).

In a large bowl, add ground chicken, soaked panko, eggs, chopped green onion, garlic powder, onion powder, chopped parsley, lemon zest, kosher salt, and black pepper. Mix gently until evenly distributed but not overworked to maintain tenderness.

Portion patties
Divide the mixture into 36 equal portions (about 1.75 to 2 ounces / 50–57 g each). Shape each into a small round patty approximately 2 1/2 inches in diameter and 1/4–3/8 inch thick, pressing a slight center indentation to reduce doming.

Cook patties
Heat a large nonstick skillet or griddle over medium heat and add olive oil or spray. Cook patties 3–4 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Work in batches to avoid overcrowding. Alternatively bake at 400°F (200°C) for 12–14 minutes, flipping once, until 165°F (74°C).

Finish and hold
Transfer cooked patties to a warm sheet pan and hold in a 200°F (95°C) oven loosely tented for up to 45 minutes.

Assemble sliders
Spread tzatziki or lemon aioli on the mini buns, place a lettuce leaf or some microgreens on the bottom bun, top with a warm chicken patty, and cap with the bun top. Arrange 36 sliders for service.
