    Combine base

    In a cocktail shaker (or a tall jar with a lid), pour 3 oz unflavored whey or plain kefir, 2 oz fresh milk, 0.5 oz honey syrup, 0.5 oz fresh lemon juice, and 0.25 tsp vanilla extract. These create the neutral creamy, slightly tangy base that gives the drink its name.

    Add texture agent

    Add 0.5 oz egg white (or aquafaba for a vegan version). The egg white will give a silky foam and mouthfeel without heat.

    Dry shake

    Seal the shaker and shake vigorously for 20–30 seconds without ice (dry shake). This emulsifies the egg white/aquafaba with the dairy and syrup to create a stable foam and fully integrate flavors.

    Wet shake

    Open the shaker, add 1 cup of fine ice (small cubes or cracked), reseal, and shake hard for 10–15 seconds until the outside of the shaker is cold and slightly frosted. This chills and dilutes the drink to proper mouthfeel.

Finishing & Serving

    Double-strain the mixture into a chilled coupe or rocks glass using a fine mesh strainer to remove any tiny ice shards and coagulated bits, leaving a smooth, creamy surface.

    Garnish: Lightly grate a small pinch (about 1/8 to 1/4 tsp) of ground nutmeg over the foam. Optionally add a small mint sprig or a thin lemon twist pinned on the rim for aroma. Serve immediately.

    Notes: This is a no-heat beverage designed to 'neutralize' palate heat or spice — the probiotics and dairy provide cooling/tang while honey and vanilla round bitterness. If using kefir or a tart yogurt drink, reduce lemon to 0.25 oz to avoid over-acidity.
