Jerk Ranch Sauce

    Combine base

    In a medium mixing bowl, whisk together the Greek yogurt and mayonnaise until smooth and uniform.

    Add dairy & acid

    Whisk in the buttermilk and fresh lime juice so the mixture reaches a pourable but thick consistency. Adjust buttermilk by 1–2 tablespoons if needed.

    Incorporate aromatics

    Add the minced garlic, chopped scallions, chopped cilantro, and chopped thyme. Stir to distribute evenly.

    Mix spices & jerk

    Add the mild jerk paste or seasoning, light brown sugar, olive oil, ground allspice, cinnamon, smoked paprika, ground ginger, salt, and black pepper. Use a spoon or spatula to thoroughly combine until the spices are fully incorporated and the color is uniform.

    Taste and balance

    Taste the sauce and adjust seasoning: add more salt for seasoning, more lime for brightness, or an extra 1/2 teaspoon of jerk paste for more flavor (not heat). If you prefer sweeter, add an additional 1/2 teaspoon honey.

    Chill to meld

    Cover the bowl or transfer the sauce to an airtight container and refrigerate for at least 30 minutes, ideally 2 hours, to let the flavors meld. The sauce will thicken slightly as it chills.

    Adjust consistency before serving

    If sauce is too thick after chilling, whisk in 1–2 tablespoons more buttermilk (or water) until desired pourable consistency is reached.

Optional mix-ins & serving

    If using cucumber or jalapeño, fold them into the chilled sauce right before serving so they retain texture and color.

    Transfer the sauce to a serving bowl and garnish with chopped chives or extra cilantro. Serve with lime wedges alongside grilled chicken, fish, roasted vegetables, fries, or as a sandwich spread.

    Store leftovers in an airtight container in the refrigerator for up to 4 days. Stir before each use; add a splash of buttermilk if it has thickened too much.
