Smothered Chicken
Prepare and Season Chicken
Pat the chicken breasts dry with paper towels. If very thick, butterfly or pound to an even ~1/2–3/4 inch thickness. Season both sides with 1 tsp kosher salt and 1 tsp black pepper.
Sear Chicken
Heat 1 tbs olive oil and 1 tbs butter in a large skillet over medium-high heat until shimmering. Add the chicken and sear 4–5 minutes per side until golden brown and just cooked through (internal temperature 160–165°F / 71–74°C). Remove chicken to a warm plate and tent with foil. Reserve pan juices in skillet.
Sauté Mushrooms and Aromatics
Reduce heat to medium. Add the remaining 1 tbs olive oil and 1 tbs butter to the skillet. Add the minced shallot and cook 1–2 minutes until translucent. Add the garlic and cook 30 seconds. Add the sliced mushrooms and cook 4–6 minutes until they release their liquid and begin to brown. Season lightly with a pinch of salt and pepper.
Deglaze and Build Sauce
Add the drained green peppercorns and 1 tbs white wine (or chicken stock) to deglaze the pan, scraping up any brown bits. Let it reduce about 30–60 seconds. Pour in 1 cup chicken stock and bring to a gentle simmer, reducing for 2–3 minutes.
Finish Creamy Peppercorn Sauce
Lower heat to medium-low and stir in 1 cup heavy cream. Simmer gently 3–5 minutes until sauce slightly thickens. If you prefer a thicker sauce, mix 1 tsp cornstarch with 1 tbs water to make a slurry and whisk into the sauce; simmer 1 minute more. Crumble in 2 oz goat cheese and stir until melted and creamy. Taste and adjust seasoning with salt and pepper as needed.
Combine and Serve
Return the seared chicken to the skillet, spoon the creamy peppercorn mushroom sauce over the breasts, and simmer 1–2 minutes to rewarm and marry flavors. Top with crispy fried onions just before serving to preserve crunch.

Preheat oven to 425°F (220°C). Toss the sliced bell peppers with 1 tbs olive oil, 1/2 tsp salt and 1/4 tsp black pepper on a rimmed baking sheet in a single layer.
Roast for 12–15 minutes, stirring once halfway through, until peppers are tender and lightly charred at the edges. Remove from oven and keep warm.
