Preparation of Pork Sausage Filling

Mix the Filling
In a mixing bowl, combine the ground pork, minced garlic, minced shallots, fish sauce, sugar, black pepper, and chopped lemongrass. Mix until all ingredients are well incorporated.

Shape the Sausage
Form the mixture into small sausage shapes or patties, about 2 inches long.

Assembly of Fresh Rolls

Prepare Rice Paper
Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it softens. Remove and lay it flat on a clean working surface.

Add Fillings
Place a lettuce leaf on the lower third of the rice paper. Add a few pieces of grilled pork sausage, a small handful of cilantro and mint leaves, julienned carrot, and cucumber.

Roll the Wrapper
Fold the sides of the rice paper over the filling, then roll from the bottom up tightly, but gently, ensuring the filling stays secure. Repeat this process with the remaining rice paper and ingredients.
Preparation of Dipping Sauce

Mix the Sauce
In a small bowl, combine peanut butter, hoisin sauce, and water. Stir until smooth.

Add Spice
Add chili paste to the sauce and mix well. Adjust the consistency with more water if necessary.

Garnish the sauce with crushed peanuts before serving.
