Prepare the Shrimp
Bring a pot of water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove from water and let cool, then slice in half lengthwise.

Cook the Pork Loin
In a pot, bring water to a boil. Add the pork loin and simmer for about 20-25 minutes until cooked through. Remove from water and let cool before slicing thinly.

Prepare the Pork Sausage
Slice the pork sausage into thin rounds and set aside.

Cook the Rice Vermicelli Noodles
In a separate pot, bring water to a boil. Add the rice vermicelli noodles and cook for 3-4 minutes until soft. Drain and rinse under cold water, then set aside.

Soften Rice Paper Wrappers
Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it softens, then lay it flat on a clean surface.

Fill the Rice Paper
In the center of the softened rice paper, layer 2-3 shrimp halves, a few slices of pork loin, a few rounds of pork sausage, a small handful of rice vermicelli, some mint leaves, cilantro leaves, a piece of lettuce, and a few strips of carrot and cucumber.

Roll the Rice Paper
Fold the sides of the rice paper over the filling, then roll from the bottom up tightly but gently to enclose the filling. Repeat the process for remaining rice paper wrappers and filling ingredients.
