Marinating the Chicken

Prepare the Marinade
In a bowl, mix together the soy sauce, mirin, honey, minced garlic, minced ginger, and sesame oil until well combined.

Marinate the Chicken
Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably 1 to 2 hours for maximum flavor.
Cooking the Chicken

Cook the Chicken
Heat a grill or frying pan over medium-high heat. Remove chicken from marinade (reserve the marinade) and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has a nice char.

Make the Teriyaki Sauce
In a small saucepan, bring the reserved marinade to a boil. Reduce the heat and simmer for about 5 minutes until slightly thickened.

Preparing the Noodles and Serving

Cook the Bún
Prepare the bún according to package instructions, usually by soaking in hot water for about 5 minutes until soft. Drain and set aside.

Assemble the Dish
On a plate, place a serving of bún, top with sliced teriyaki chicken, and garnish with julienned cucumber, carrot, chopped green onions, sesame seeds, and fresh cilantro.
