Prepare the Bao Buns

Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 10 minutes until frothy.

Make Dough
In a large bowl, combine all-purpose flour, baking powder, and salt. Add the activated yeast mixture and vegetable oil. Mix until a dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for 1 hour or until doubled in size.

Shape Buns
After the dough has risen, punch it down and divide it into 8 equal pieces. Shape each piece into a ball and flatten slightly.

Steam Buns
Place the shaped buns on parchment paper in a steamer basket. Steam over boiling water for about 15 minutes until fluffy.
Prepare the Grilled Pork

Marinate Pork
In a bowl, mix soy sauce, fish sauce, brown sugar, minced garlic, and black pepper. Add the pork and marinate for at least 30 minutes.

Slice Pork
After resting, slice the grilled pork thinly for easier assembly in the bao buns.
Assemble the Bao Buns

Spread Mayo
Take a steamed bao bun and spread a thin layer of mayonnaise on the inside.

Add Fillings
Layer shredded lettuce, sliced tomato, grilled pork slices, and chopped cilantro inside the bun.

Drizzle Hoisin Sauce
Finish with a drizzle of hoisin sauce over the top of the fillings.

Serve the assembled bao buns warm and enjoy!
