Preparation

    Prepare the Chicken

    Rinse the whole chicken under cold water and pat it dry with paper towels. This helps to remove any impurities and excess moisture.

    Season with Salt

    Generously rub the coarse sea salt all over the chicken, including the cavity. Ensure that the salt is evenly distributed for the best flavor.

    Prepare Aromatics

    Slice the ginger into thin strips and crush the garlic cloves with the flat side of a knife. Chop the green onions into 2-inch pieces.

    Stuff the Chicken

    Stuff the cavity of the chicken with the sliced ginger, crushed garlic, and chopped green onions to infuse flavor during cooking.

Steaming

    Set Up the Steamer

    Fill a large pot with 4 cups of water and place a steaming rack inside. Bring the water to a boil.

    Prepare the Chicken for Steaming

    Place the stuffed chicken on the steaming rack. Add a few slices of lemon on top of the chicken for added flavor and moisture.

    Steam the Chicken

    Cover the pot with a lid and steam the chicken for about 45-60 minutes, depending on the size of the chicken. The chicken is done when the juices run clear and the internal temperature reaches 165°F (75°C).

    Rest the Chicken

    Once cooked, carefully remove the chicken from the steamer and let it rest for about 10 minutes before carving.

    In a small bowl, combine soy sauce, fresh lime juice, chili oil, and chopped cilantro. Stir well to mix all the ingredients together.
