Preparation of Calamari

Clean and Slice Calamari
Begin by cleaning the calamari thoroughly. Remove the skin and innards, then rinse under cold water. Slice the calamari into rings about 1/2 inch thick.

Prepare Coating Mixture
In a large mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and red pepper flakes. Mix well until all dry ingredients are evenly blended.

Heat Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test the oil by dropping a small amount of the coating mixture into the oil; it should sizzle immediately.

Coat and Fry Calamari
Dredge the calamari rings in the coating mixture, ensuring they are evenly coated. Fry the calamari in batches, avoiding overcrowding the pan. Cook for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.
Serving

Transfer the crispy calamari to a serving platter. Sprinkle with chopped parsley and serve with lime wedges on the side. Accompany with sweet chili sauce for dipping.
