    Cook the Jasmine Rice

    Rinse 2 cups of jasmine rice under cold water until the water runs clear. In a large pot, add the rinsed rice and 4 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and all water is absorbed. Fluff with a fork and let it cool.

    Prepare the Proteins

    If using chicken or shrimp, season with salt and black pepper. Dice chicken breast into bite-sized pieces. If using tofu, press it to remove excess moisture and cube.

Cooking

    Stir-fry Ingredients

    In a large wok or skillet, heat 3 tablespoons of vegetable oil over medium-high heat. Add the diced chicken and stir-fry for 3-4 minutes until cooked through. Add the shrimp and cook until they turn pink, about 2 minutes. If using tofu, add it and fry until golden brown. Remove the cooked proteins from the wok and set aside.

    Scramble the Eggs

    In the same wok, add a little more oil if necessary. Crack in the 3 eggs and scramble them until fully cooked. Remove and set aside with the proteins.

    Add Vegetables

    Add the diced carrots and frozen peas to the wok. Stir-fry for 3-4 minutes until the vegetables are tender.

    Combine Everything

    Return the cooked proteins and scrambled eggs to the wok. Add the cooked jasmine rice, soy sauce, and chopped green onions. Stir everything together and cook for another 2-3 minutes until heated through. Adjust seasoning with salt and black pepper to taste.
