Method
Prepare the Broth

Boil Broth
In a large pot, add beef bones and water. Bring to a boil, then reduce heat to low. Skim any foam that rises to the surface.

Add Spices
Add roasted onion, ginger, star anise, cinnamon stick, cloves, fish sauce, and salt to the pot. Simmer for at least 3-4 hours.

Strain Broth
Once the broth is rich and flavorful, strain it through a fine sieve or cheesecloth into another pot. Discard solids.
Cook Noodles

Prepare Rice Noodles
Soak rice noodles in warm water for about 30 minutes until soft. Drain and set aside.

Cook Noodles
Bring a separate pot of water to a boil. Add soaked noodles and cook for 2-3 minutes until tender. Drain and rinse with cold water.
Assemble Pho

Prepare Meat
While noodles are cooking, prepare the sliced eye round steak, brisket, meatballs, and cooked tendon.

Serve
In a bowl, add a portion of noodles, top with the sliced meats, and ladle hot broth over. Serve with a side of fresh basil, bean sprouts, lime wedges, jalapeños, and green onions.
