Pork Marinade

Marinating the Pork

    Prepare the Marinade

    In a bowl, combine minced garlic, minced shallots, fish sauce, soy sauce, sugar, black pepper, and sesame oil. Mix well.

    Prepare the Lemongrass

    Remove the outer layers of the lemongrass stalk and finely chop the tender part. Add it to the marinade.

    Marinate the Pork

    Cut the pork into thin slices or strips and add it to the marinade. Ensure the pork is evenly coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Cooking the Pork

    Preheat the Grill or Pan

    Preheat your grill or a frying pan over medium-high heat.

    Cook the Pork

    Remove the pork from the marinade and grill or pan-fry for about 5-7 minutes on each side, or until fully cooked and slightly charred.

    Rest the Pork

    Once cooked, let the pork rest for a few minutes before slicing it into bite-sized pieces.

Serving the Dish

    Prepare the Rice Noodles or Rice

    If using rice noodles, cook them according to package instructions. If using rice, prepare it as desired.

    Assemble the Dish

    In a bowl, layer the rice noodles or rice, top with grilled pork, and garnish with fresh herbs, julienned cucumber, and carrots.

    Serve with Lime

    Serve with lime wedges on the side for squeezing over the top.
