Marinade Preparation

Prepare the Marinade
In a bowl, combine minced lemongrass, garlic, shallots, soy sauce, fish sauce, honey, vegetable oil, and black pepper. Mix well until all ingredients are thoroughly combined.

Marinate the Chicken
Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for deeper flavor.
Cooking the Chicken

Preheat the Grill
Preheat your grill to medium-high heat, approximately 200-230°C (400-450°F).

Grill the Chicken
Remove the chicken from the marinade, letting excess marinade drip off. Place the chicken on the preheated grill and cook for about 6-7 minutes per side or until the internal temperature reaches 75°C (165°F) and the chicken is nicely charred.

Rest the Chicken
Once cooked, remove the chicken from the grill and let it rest for about 5 minutes before slicing.

Prepare the Noodles
Cook the rice vermicelli noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.

Assemble the Dish
In a bowl, place a serving of rice vermicelli noodles. Top with sliced grilled chicken, julienned cucumber, carrots, and fresh herbs. Garnish with crushed peanuts and serve with lime wedges on the side.
