Cut the chicken breast into bite-sized pieces (about 1.5 inches).

In a bowl, combine soy sauce, fish sauce, lime juice, brown sugar, minced garlic, black pepper, and red chili flakes. Stir until the sugar has dissolved.

Marinate Chicken
Add the chicken pieces to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Dipping Sauce

In a small bowl, whisk together fish sauce, lime juice, sugar, and water until sugar is dissolved.

Stir in minced garlic and chopped red chili. Set aside to let the flavors meld.
Skewering and Grilling

Soak Skewers
If using bamboo skewers, soak them in water for at least 30 minutes to prevent burning.

Thread the marinated chicken pieces onto the soaked skewers, packing them closely but not too tightly.

Remove the skewers from the grill and let them rest for a few minutes. Serve with dipping sauce on the side.
