    Prepare the Filling

    In a large mixing bowl, combine ground pork, crab meat, finely shredded carrots, soaked and chopped mung bean noodles, minced garlic, and chopped green onions. Mix well.

    Season the Mixture

    Add fish sauce, salt, pepper, and sugar to the mixture. Mix thoroughly to ensure the seasoning is evenly distributed.

Rolling

    Soften Rice Paper

    Fill a flat dish with warm water. Dip one rice paper sheet in the water for about 10-15 seconds, or until soft and pliable. Remove and shake off excess water.

    Fill and Roll

    Place a small amount of the filling mixture at the bottom of the rice paper. Fold the sides over the filling and roll it tightly from the bottom to the top, ensuring the filling is sealed inside. Repeat with remaining rice paper sheets and filling.

Frying

    Heat the Oil

    In a large frying pan or wok, heat the vegetable oil over medium-high heat until hot.

    Fry the Rolls

    Carefully place the rolled rice paper rolls into the hot oil, being careful not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes on each side.

    Drain Excess Oil

    Once fried, remove the rolls from the oil and place them on a plate lined with paper towels to absorb excess oil.

    Serve the crispy rice paper rolls hot, with your choice of dipping sauce such as hoisin or sweet chili sauce.
