Prepare the Filling

Mix the Ingredients
In a large mixing bowl, combine the ground pork, chopped shrimp, grated carrots, chopped mushrooms, shredded cabbage, minced garlic, and chopped green onions. Mix thoroughly until all ingredients are well incorporated.

Season the Mixture
Add fish sauce, salt, black pepper, and sugar to the mixture. Stir in the beaten egg and blend until everything is evenly coated. Set aside for 15 minutes to allow flavors to meld.
Assemble the Eggrolls

Prepare the Wrappers
Lay an eggroll wrapper on a clean flat surface, with one corner pointed toward you.

Fill the Wrapper
Place about 2 tablespoons of the filling mixture in the center of the wrapper. Fold the corner closest to you over the filling, then fold in the two side corners, and roll tightly until you reach the top corner. Seal the edge with a little water.

Continue filling and rolling the remaining wrappers until all filling is used.

Fry the Eggrolls
Carefully place a few eggrolls in the hot oil, making sure not to overcrowd the pan. Fry for about 4-5 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on paper towels.

Let the eggrolls cool slightly before serving. Enjoy with dipping sauce of your choice.
