Preparation of Chicken Wings

Season the Chicken Wings
In a large bowl, toss the chicken wings with salt, black pepper, and baking powder until evenly coated.

Prepare for Frying
Place the seasoned chicken wings on a wire rack over a baking sheet and let them sit in the refrigerator for at least 30 minutes to dry out.

Heat the Oil
In a large pot, heat vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Wings
Carefully add the chicken wings in batches to the hot oil. Fry for about 8-10 minutes or until golden brown and crispy. Remove wings from oil and drain on paper towels.
Making Sweet Soy Sauce

Combine Ingredients
In a small saucepan, combine soy sauce, brown sugar, minced garlic, grated ginger, and sesame oil.

Simmer the Sauce
Heat over medium heat, stirring until the sugar dissolves. Bring to a gentle simmer for about 5 minutes, then remove from heat.
Making Sweet and Spicy Sauce

Mix the Sauce
In a bowl, combine honey, Sriracha sauce, soy sauce, rice vinegar, and garlic powder. Stir well until smooth.
Making Garlic Butter Sauce

Remove from heat and stir in chopped parsley and lemon juice. Mix well.

Choose one of the sauces and toss the crispy chicken wings in it until evenly coated.
