Make the Dough
In a large mixing bowl, combine all-purpose flour and salt. Gradually add water while mixing until a smooth dough forms. Knead on a floured surface for about 5 minutes until elastic. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling
In a mixing bowl, combine ground chicken, shredded cabbage, shredded carrots, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and pepper. Mix until well combined.
Assembling Potstickers

Shape the Potstickers
After the dough has rested, divide it into small balls (about 1 inch in diameter). Roll each ball into a thin circle. Place a spoonful of filling in the center of each circle. Fold the dough over the filling, pinching the edges to seal tightly.
Cooking Potstickers

Cook the Potstickers
In a large skillet, heat a little oil over medium heat. Add the potstickers in a single layer and cook for 2-3 minutes until the bottoms are golden brown. Carefully add 1/4 cup of water to the skillet, cover immediately, and steam for about 5 minutes until cooked through. Remove the lid and cook for an additional 2 minutes to crisp up the bottoms.
Sesame Soy Sauce Preparation

Make the Sauce
In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, and sesame seeds. Stir in chopped green onions. Set aside as a dipping sauce for the potstickers.
